When you actually sit down to "describe" yourself, it's actually a bit daunting! Let me just say, I'm a Mom of 2 young boys, a wife, I work full-time and am blessed to be surrounded my many friends and a very involved extended family. I can often be found in my kitchen, in my pyjamas of course, cooking dinner or baking or lamenting over the dishes to be done. I like the comfort and serenity that puttering in my kitchen offers. It is sometimes calming, sometimes a disaster, most times a mess but always filled with love.

An unexpected muffin morning



Saturday mornings are our swimming lessons day.  This means that despite it being Saturday, we are still rushing around to get the usual routine done and off to the pool on time.  This morning however, my snotty 2 year old announced that he is in fact, NOT going swimming. Given the recent fever and the snot of course, I decided to spare the other pool users from Ian's disease and pestulence. So off goes husband with 4 year old and that leaves Ian and I free to bake.  Step one for this project, more coffe of course.


My favorite, favorite morning muffins are my Blueberry Lemon muffins.  They are so, so delicious.  Here is the recipe so you too can enjoy these tomorrow morning.  I swear, you must go out and buy the ingredients if you don't already have them or you will miss out on a little bit of heaven.

Lemon Blueberry Muffins

In a large bowl mix together:
2 cups flour
1 cup sugar
3 tsp. baking powder
1/2 teaspoon salt
Zest of one lemon

**warning, if your assistant is 2 years old, much mess will ensue


In a seperate bowl mix together
1/2 cup melted butter
1 egg
1 cup of milk

Fold wet ingredients into dry, batter will be lumpy.  Gently fold in 1 cup of frozen (or fresh if you've got them) Blueberries.

Make sure you spray muffin tin with cooking spray before evenly pouring into a 12 muffin tin. 

Bake 350 for 20 minutes.

    Now Kathryn says I have to put lemons on the shopping list. ;-)

    Maybe you could just post your mealplans each week and save me the trouble of thinking about what I'm making!
